Ingredients

  • 3 medium tomatoes seeded and diced
  • 1 small shallot finely chopped
  • 3 tablespoons fresh basil chopped
  • 2 tablespoons fresh parsley chopped
  • 1 1/2 teaspoons capers in vinegar chopped
  • 2 1/2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Pinch of salt
  • Pinch of black pepper

Instructions

  • In a bowl, add the tomatoes, shallot, basil, parsley, and capers. Drizzle with extra-virgin olive oil and lemon juice, then season with a pinch of salt and black pepper. Mix gently to combine.
