Ingredients
- 2 salmon fillets 6 ounces each
- 2 medium sweet potatoes peeled and diced into 1-inch cubes
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1 teaspoon dried rosemary
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
Instructions
- Preheat your oven to 400°F. Toss the sweet potatoes with 1 tablespoon olive oil, salt, pepper, garlic powder, onion powder, and rosemary. Spread them on a baking sheet.

- Bake in the preheated oven for 15 minutes until they begin to soften.
- While potatoes cook, drizzle the salmon fillets with the remaining 1 tablespoon olive oil and season with salt and black pepper.

- Remove the baking sheet from the oven, push the sweet potatoes to one side, and place the salmon fillets on the other side of the sheet.
- Return to the oven and bake for 10-15 more minutes, or until the salmon is cooked through and flakes easily with a fork.
