- 1 3/4 pounds sweet potatoes peeled and cut into 1/2 to 3/4 inch cubes
- 3 tablespoons olive oil
- 1 teaspoon salt or to taste

- Parsley or cilantro chopped (optional for garnish)
Instructions
- Preheat the oven to 400°F.
- In a large bowl, toss the sweet potato cubes with olive oil, salt, and pepper until evenly coated.

- Spread the seasoned sweet potato cubes in a single layer on a parchment-lined baking sheet.

- Bake for 25-30 minutes in the preheated oven, flipping the cubes halfway through the cooking time.

- When sweet potatoes are golden and crispy, remove them from the oven. If desired, season with additional salt and pepper, and garnish with parsley or cilantro before serving.
