Ingredients

  • 1 3/4 pounds sweet potatoes peeled and cut into 1/2 to 3/4 inch cubes
  • 3 tablespoons olive oil
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste
  • Parsley or cilantro chopped (optional for garnish)

Instructions

  • Preheat the oven to 400°F.
  • In a large bowl, toss the sweet potato cubes with olive oil, salt, and pepper until evenly coated.

  • Spread the seasoned sweet potato cubes in a single layer on a parchment-lined baking sheet.
