Ingredients

  • 2 pounds carrots peeled and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 2 1/2 tablespoons parsley chopped

Instructions

  • Preheat the oven to 425°F.
  • Toss the carrots with olive oil, salt, pepper, garlic powder, and oregano in a large bowl.
