- 1/2 cup unsalted butter softened
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1/2 cup creamy peanut butter
- 1 large egg
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup old-fashioned oats
Instructions
- Preheat the oven to 350°F. Line baking sheets with parchment paper.
- In a large bowl, cream together the butter, granulated sugar, brown sugar, and peanut butter until smooth. Beat in the egg and vanilla extract until well blended.

- Combine the flour, baking soda, and salt; stir into the creamed mixture. Mix in the oats until just combined.

- Drop tablespoonfuls of dough onto the prepared baking sheets, spacing them 2 inches apart.

- Bake in the preheated oven for 10 to 12 minutes, or until the edges are golden. Do not overbake to ensure they remain soft and chewy.

- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
