Ingredients

  • 1 cup creamy peanut butter
  • 6 tablespoons unsalted butter softened
  • 2 cups powdered sugar
  • Pinch kosher salt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips
  • Vegetable or coconut oil as needed
  • Sprinkles optional

Instructions

  • In a large bowl, beat the peanut butter and butter together until smooth using a hand mixer.

  • Sift the powdered sugar on top and beat again. Add the salt and vanilla extract and beat until smooth. The dough should be fairly dry for rolling out. Add more powdered sugar as needed to achieve the right consistency.

  • Roll the peanut butter dough into balls about ½ to 1-inch in diameter and place on a baking sheet lined with parchment paper. Freeze for 20 minutes to harden.

  • Meanwhile, microwave the chocolate chips in 20-second intervals, stirring in between until smooth. Add oil as needed to thin it out for easier dipping.

  • Using a fork or skewer, dip the peanut butter balls into the chocolate; shake off excess. Top with sprinkles if desired.
