Instructions
- Melt the butter in a medium saucepan over medium heat.

- Whisk in the flour until smooth and cook for about 1 minute until it starts to turn golden.

- Gradually add the milk, whisking continuously, and bring the mixture to a simmer. Cook until the sauce thickens, about 5 minutes.
- Reduce heat to low and stir in the grated cheese, salt, and cayenne pepper. Continue stirring until the cheese is completely melted and the sauce is smooth.
