Ingredients
- 1 cup orzo pasta
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- 1/2 cup red onion finely chopped
- 1/2 cup Kalamata olives pitted and sliced
- 1/2 cup feta cheese crumbled
- 1/4 cup fresh parsley chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Cook orzo pasta in boiling, salted water according to package instructions until al dente, then drain and rinse under cold water to cool.

- In a large bowl, combine the cooled orzo with tomatoes, cucumber, red onion, olives, feta cheese, and parsley.

- Whisk together olive oil, lemon juice, oregano, salt, and pepper in a small bowl. Pour over the salad and toss to combine.
