Mediterranean Orzo Salad

Ingredients

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  • Cook orzo pasta in boiling, salted water according to package instructions until al dente, then drain and rinse under cold water to cool.
  • In a large bowl, combine the cooled orzo with tomatoes, cucumber, red onion, olives, feta cheese, and parsley.

  • Whisk together olive oil, lemon juice, oregano, salt, and pepper in a small bowl. Pour over the salad and toss to combine.
