Ingredients

  • 2 cups all-purpose flour
  • 1 1/3 cups granulated sugar
  • 1 1/4 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 large eggs
  • 2/3 cup vegetable oil
  • 2/3 cup key lime juice
  • 3/4 cup Greek yogurt
  • 8 ounces unsalted butter softened
  • 8 ounces cream cheese softened
  • 6 1/4 cups powdered sugar
  • 1 1/2 teaspoons vanilla extract
  • Green food coloring optional

Instructions

  • Preheat the oven to 350°F. Grease and flour two 8-inch cake pans.

  • In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

  • In another bowl, beat eggs, oil, and key lime juice until smooth.

  • Add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the Greek yogurt.
  • Transfer batter to the prepared pans and bake for 20-25 minutes, or until a toothpick inserted comes out clean. Allow to cool before frosting.
  • In a mixing bowl, cream together butter and cream cheese. Gradually add powdered sugar and vanilla, beating until smooth. Add green food coloring if desired. Frost the cooled cakes.
