Instant Pot Meatloaf

Ingredients

  • 2 pounds lean ground beef 90% lean
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup finely chopped onion
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup ketchup for glaze
  • 2 tablespoons brown sugar for glaze
  • 1 tablespoon apple cider vinegar for glaze

Instructions

  • In a large bowl, mix together ground beef, breadcrumbs, eggs, onion, ketchup, Worcestershire sauce, salt, and pepper until well combined.

  • Form the meat mixture into a loaf shape and place on a piece of aluminum foil. Fold the edges of the foil up to create a 'boat' around the meatloaf.

  • Pour 1 cup of water into the Instant Pot and place the trivet inside. Place the foil with the meatloaf on the trivet. Secure the lid, set the valve to sealing, and cook on manual high pressure for 25 minutes.

  • While the meatloaf cooks, mix together 1/2 cup ketchup, brown sugar, and apple cider vinegar to make the glaze.

  • Once the Instant Pot cycle is complete, allow natural pressure release for 10 minutes then do a quick release. Carefully remove the meatloaf, apply the glaze, and broil in the oven for 5 minutes until the glaze is bubbly.
