Ingredients

  • 8 slices bacon diced
  • 1/4 cup finely diced onion or shallot
  • 3/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup water
  • 1/2 cup apple cider vinegar

Instructions

  • Cook the bacon in a skillet over medium heat until crisp. Remove bacon and set aside, leaving about 1/4 cup of bacon grease in the skillet.

  • Add the onion to the skillet and sauté until soft and translucent, about 5 minutes.

  • In a bowl, whisk together sugar, cornstarch, salt, and pepper. Gradually whisk in water and vinegar until smooth.
