Ingredients
- 1 1/2 cups whole-wheat flour
- 2 1/4 teaspoons baking powder
- 1 1/2 tablespoons sugar
- 1/4 teaspoon salt
- 1 cup low-fat milk
- 1/3 cup vanilla Greek yogurt
- 2 large eggs
- 1 1/2 tablespoons melted coconut oil plus extra for cooking
- 3/4 teaspoon vanilla extract
- Preferred toppings such as powdered sugar, maple syrup, or fresh fruit
Instructions
- In a mixing bowl, whisk together the whole-wheat flour, baking powder, sugar, and salt.

- In another bowl, whisk together the milk, yogurt, eggs, melted coconut oil, and vanilla extract.

- Add the wet ingredients to the dry ingredients and mix until just combined. It's fine if there are a few lumps; avoid overmixing.

- Heat a nonstick griddle or large skillet over medium heat. Lightly grease with coconut oil.
- To make heart shapes, pour batter onto the griddle using a spoon, shaping into hearts. You can also use a greased heart-shaped cookie cutter (made of metal, not plastic) on the griddle and pour batter inside.

- Cook until bubbles appear on top and edges look set, about 2-3 minutes. Carefully flip and cook another 1-2 minutes until golden brown.

- Enjoy warm with preferred toppings.
