Ingredients
- 2 tablespoons olive oil
- 1 cup diced onion
- 3/4 cup diced carrots
- 3/4 cup diced celery
- 2 cloves garlic minced
- 6 cups low-sodium chicken broth
- 2 cups diced cooked ham
- 1 cup diced potatoes
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/2 cup chopped fresh parsley
Instructions
- Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery, and sauté until softened, about 5 minutes.

- Add garlic and cook until fragrant, about 1 minute. Pour in chicken broth, ham, potatoes, and thyme. Bring to a boil, then reduce heat and simmer for 20 minutes, or until potatoes are tender.

- Season with salt and pepper. Stir in fresh parsley just before serving.
