Ingredients

  • 2 tablespoons olive oil
  • 1 cup diced onion
  • 3/4 cup diced carrots
  • 3/4 cup diced celery
  • 2 cloves garlic minced
  • 6 cups low-sodium chicken broth
  • 2 cups diced cooked ham
  • 1 cup diced potatoes
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup chopped fresh parsley

Instructions

  • Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery, and sauté until softened, about 5 minutes.

  • Add garlic and cook until fragrant, about 1 minute. Pour in chicken broth, ham, potatoes, and thyme. Bring to a boil, then reduce heat and simmer for 20 minutes, or until potatoes are tender.
