Ham and Cabbage Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion chopped
  • 2 carrots diced
  • 2 stalks celery diced
  • 3 cloves garlic minced
  • 6 cups low-sodium chicken broth
  • 4 cups cabbage shredded
  • 2 cups cooked ham diced
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery, cooking until softened, about 5 minutes.
