Ingredients
- 1 1/2 tablespoons olive oil
- 3 garlic cloves minced
- 1 medium yellow onion diced
- 1 pound lean ground turkey
- 1 1/2 cups sweet potatoes diced
- 1 medium bell pepper diced (any color)
- Salt and freshly ground black pepper to taste
- A pinch of red chili flakes optional
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 2 cups baby spinach
- 2/3 cup shredded mozzarella cheese
- Chopped green onions for garnish, optional
- Chopped tomatoes for garnish, optional
- Lime wedges for serving, optional
Instructions
- In a large skillet, heat the olive oil over medium-high heat. Then, add the minced garlic and diced onion. Sauté until they soften, roughly 2 minutes.

- Add the ground turkey to the skillet. Cook while breaking it apart with a wooden spoon until it is browned and no longer pink, about 5-7 minutes.

- Incorporate the diced sweet potatoes and bell pepper into the skillet. Season with salt, pepper, a pinch of red chili flakes if desired, onion powder, paprika, and oregano.

- Cover the skillet and cook, stirring occasionally, until the sweet potatoes are tender enough to be pierced with a fork, about 8 to 12 minutes. If necessary, add a splash of water to prevent the mixture from drying out.

- Add the spinach and stir to mix it in. Sprinkle the shredded mozzarella cheese evenly over the skillet. Cover and cook until the cheese melts and the spinach has softened, about 2-4 minutes.

- Remove the skillet from heat. Garnish with chopped green onions and diced tomatoes. Finish with a squeeze of lime if desired. Serve hot.
