- 2 large eggs beaten
- 2 cups breadcrumbs

- Black pepper to taste
- 2 medium zucchinis sliced into 1/4-inch rounds
Instructions
- Heat oil in a large skillet over medium heat until it reaches 350°F.
- Prepare the dredging stations: Place flour in one bowl, beaten eggs in another, and breadcrumbs mixed with salt and pepper in a third bowl.

- Dredge zucchini rounds first in flour, then dip in eggs, and finally coat with breadcrumb mixture.

- Fry the breaded zucchini in batches until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.
