- 1 large egg
- 1/4 cup feta cheese crumbled

- 1 slice whole grain bread toasted

Instructions
- Heat olive oil in a non-stick skillet over medium heat and add the crumbled feta cheese, forming a circle with an empty center for the egg.

- Once the feta begins to sizzle and brown, gently crack the egg into the center of the feta circle, being careful not to break the yolk.

- Sprinkle the egg with dried oregano, red pepper flakes, salt, and pepper. Cook to your desired doneness, allowing the feta to crisp up and form a golden crust.
- Carefully slide the fried egg and feta onto the toasted bread and serve immediately.
