Ingredients
- 2 tablespoons olive oil
- 1 red onion sliced
- 3 portobello mushrooms sliced
- 1 red, yellow, and green bell peppers sliced
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon chipotle pepper
- Salt to taste
Instructions
- Heat olive oil in a griddle pan over medium-high heat. Add remaining ingredients.

- Cook for 8 to 10 minutes, stirring occasionally until the veggies are charred but still crisp.
