Fajita Veggies (Chipotle Copycat)

Ingredients

  • 2 tablespoons olive oil
  • 1 red onion sliced
  • 3 portobello mushrooms sliced
  • 1 red, yellow, and green bell peppers sliced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chipotle pepper
  • Salt to taste

Instructions

  • Heat olive oil in a griddle pan over medium-high heat. Add remaining ingredients.
