Elote dip served with tortilla chips, topped with diced green peppers.

Ingredients

  • 1 tablespoon olive oil
  • 4 cups corn kernels fresh or frozen (thawed, if frozen)
  • 1/4 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1/2 cup crumbled feta cheese or Cotija cheese
  • 2 tablespoons fresh cilantro finely chopped
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1 clove garlic minced
  • Salt and freshly ground black pepper to taste

Instructions

  • Heat olive oil in a large skillet over medium-high heat. Add corn and cook, stirring occasionally, until corn is golden and begins to char, about 7-10 minutes.

  • In a large bowl, combine the Greek yogurt, mayonnaise, feta or Cotija cheese, cilantro, lime juice, chili powder, smoked paprika, and minced garlic. Mix until well combined.

  • Add the cooked corn to the yogurt mixture and stir to combine. Season with salt and pepper to taste. Serve warm or at room temperature with tortilla chips for dipping.
