Cucumber sandwiches made with brown bread, cream cheese, and thinly sliced cucumbers.

Ingredients

  • 1 cup plain Greek yogurt
  • 1 tablespoon fresh dill finely chopped
  • 1 tablespoon fresh chives finely chopped
  • 1/4 teaspoon garlic powder
  • Sea salt to taste
  • Freshly ground black pepper to taste
  • 1 large English cucumber thinly sliced into coins
  • 10 slices whole grain bread crusts cut off

Instructions

  • In a mixing bowl, combine Greek yogurt, chopped dill, chives, garlic powder, salt, and pepper until well mixed.

  • Place two slices of bread on your chopping board, and spread the yogurt mixture evenly on one side of each slice of bread.

  • Arrange cucumber slices on one of the slices of bread, then top with the other bread slice to form a sandwich.

  • Cut each sandwich into two or three strips and serve immediately, or cover and refrigerate to keep fresh.
