Ingredients
- 1 banana peeled and sliced
- 1 medium apple cored and chopped
- 1 1/2 teaspoons lemon juice
- 1 10-ounce can pineapple chunks drained
- 1 11-ounce can mandarin oranges drained
- 1 cup red grapes halved
- Honey to taste (optional)
- 2/3 cup plain Greek yogurt
- 1/2 cup sweetened shredded coconut
- 1 1/4 cups mini marshmallows
Instructions
- Place the banana and chopped apple in a large bowl and toss with the lemon juice.

- Add the drained pineapple chunks, mandarin oranges, and halved red grapes to the bowl and gently toss to combine.

- If using honey to sweeten the Greek yogurt, first mix the honey and yogurt together; adjust sweetness to taste. Then mix the Greek yogurt, shredded coconut, and mini marshmallows with the fruit until it is evenly coated.

- Cover the bowl and refrigerate for at least 3 hours to allow the flavors to meld.
- After chilling, lightly toss the salad and enjoy.
