Ingredients
- 3 large eggs
- 5 tablespoons cottage cheese
- 2 teaspoons whole milk
- 1/4 teaspoon kosher salt
- 2 pinches black pepper
- 1 1/2 teaspoons olive oil
- 1 tablespoon chopped green onions
Instructions
- In a bowl, whisk together eggs, 2 tablespoons of cottage cheese, milk, salt, and pepper until smooth.

- Heat olive oil in a non-stick frying pan over medium-low heat.
- Pour the egg mixture into the pan, cooking for about 5 minutes until the eggs are mostly set.

- Spoon the remaining 3 tablespoons of cottage cheese onto one half of the omelette. Fold the omelette over and cook for an additional minute.

- Slide the omelette onto a plate, garnish with chopped green onions, and serve immediately.
