Ingredients
- 4 boneless, skinless chicken breasts 6 ounces each
- Zest and juice of 1 lime plus 1 lime cut into wedges for garnish
- 1 tablespoon olive oil
- 1/2 cup fresh cilantro divided
- 2 cloves garlic minced
- 1 teaspoon sea salt
- Freshly ground black pepper to taste
Instructions
- Cover the chicken breasts with a layer of plastic wrap, then pound the thicker end of the chicken breasts to an even thickness using a meat mallet or rolling pin.

- Create the marinade by mixing lime juice, lime zest, olive oil, half of the chopped cilantro, minced garlic, salt, and black pepper in a container or resealable bag.
- Coat the chicken breasts on all sides in the marinade. Store in the refrigerator and allow to marinate for at least 1 hour or ideally overnight.

- Prepare the grill or grill pan by lightly oiling it and preheating to medium-high heat.
- Grill the chicken for approximately 5 minutes on each side, or until it is well-charred and the internal temperature reaches 165°F.

- Let the chicken rest on a platter or chopping board for 5 minutes, then squeeze fresh lime juice over it and garnish with the remaining cilantro.
