Ingredients

  • 1 cup crumbled chorizo sausage
  • 1/2 cup heavy cream
  • 2 cups shredded Monterey Jack cheese
  • 2 tablespoons chopped fresh cilantro
  • Tortilla chips or warm tortillas for serving

Instructions

  • In a skillet over medium heat, cook the chorizo until fully browned and no longer pink, about 5-7 minutes. Drain the chorizo on paper towels to remove excess oil.

  • Pour heavy cream into the same skillet and reduce heat to low. Gradually add the shredded cheese, stirring constantly until the cheese is completely melted and smooth, approximately 2-5 minutes.

  • Remove the skillet from heat, add the cooked chorizo back into the cheese mixture, and stir to combine. Sprinkle with chopped cilantro and serve the choriqueso warm with tortilla chips or warm tortillas.
