Ingredients
- 2 Persian cucumbers diced
- 1/4 cup pepperoncini sliced (optional)
- 1 small bell pepper diced (any color)
- 2 medium tomatoes diced
- 1/2 cup red onion diced
- 2/3 cup Kalamata olives halved
- 1/2 cup feta cheese crumbled
- 1/4 cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- 1/2 teaspoon dried basil
- 1 1/4 teaspoons dried oregano
- Salt to taste
Instructions
- Combine all chopped ingredients in a large salad bowl.

- Crumble feta cheese over the chopped vegetables.

- In a small bowl, whisk together olive oil, red wine vinegar, dried basil, dried oregano, and salt.

- Pour the dressing over the salad and toss gently to combine. Adjust salt if needed.
