Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/4 teaspoons baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups shredded zucchini packed
  • 3/4 cup semisweet chocolate chips

Instructions

  • Preheat the oven to 350°F.
  • In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
  • In a large bowl, whisk together eggs, oil, brown sugar, granulated sugar, and vanilla extract until smooth.
  • Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the shredded zucchini and chocolate chips.
  • Grease a 9x5-inch loaf pan with cooking spray.
  • Pour the batter into the prepared loaf pan and bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
