Ingredients

  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 2 tablespoons red wine vinegar
  • 4 cloves garlic minced
  • 2 1/2 teaspoons dried oregano
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 pounds boneless skinless chicken thighs
  • 6 pita breads
  • 1 1/4 cups Greek yogurt
  • 1 English cucumber grated and drained
  • 1 tablespoon fresh dill chopped
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • 1 to 2 tomatoes sliced
  • 1 small red onion thinly sliced
  • Fresh lettuce chopped
  • Crumbled feta cheese optional

Instructions

  • In a bowl, mix olive oil, lemon juice, red wine vinegar, 4 minced garlic cloves, oregano, salt, and pepper. Add chicken thighs and coat evenly. Marinate for at least 1 hour.

  • Grill the marinated chicken over medium heat for 5 minutes on each side or until fully cooked. Let it rest before slicing.

  • Combine Greek yogurt, grated cucumber, dill, 2 minced garlic cloves, salt, and pepper in a bowl. Adjust seasonings and chill until ready to use.

  • Warm the pita breads, then add slices of chicken, tzatziki sauce, lettuce, slices of tomato, and red onion. Sprinkle on optional feta cheese. Fold and serve.
