Ingredients
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 2 1/3 cups milk 2%
- 4 1/2 tablespoons Dijon mustard
- 1/3 cup grated Parmesan cheese plus more to taste
- Salt to taste
- Pepper to taste
Instructions
- In a medium saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 1 minute to form a smooth roux.

- Slowly incorporate the milk while whisking until the mixture becomes smooth. Keep cooking for 3 to 5 minutes, allowing the sauce to thicken.

- Stir in the Dijon mustard, grated Parmesan cheese, salt, and pepper. If needed, add another splash of milk to thin the sauce. Adjust seasonings and Parmesan as needed.

- Cook for an additional minute and then remove from heat.
