Ingredients

  • 2 tablespoons vegetable oil
  • 1/2 cup red onion diced
  • 1 red bell pepper diced
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 2 medium boneless skinless chicken breasts cooked and diced
  • 3 cups cooked white rice cold
  • 2 1/2 tablespoons soy sauce
  • 4 large eggs beaten
  • Salt and pepper to taste
  • 2 green onions sliced for garnish

Instructions

  • Heat oil in a large skillet over medium heat. Add red onion and bell pepper, and sauté until softened, about 3-5 minutes. Add garlic and ginger, and cook until fragrant, about 1 minute.
