Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 1/2 cups applesauce unsweetened
  • 1/2 cup sugar
  • 1/4 cup avocado oil (or any neutral-flavored oil)
  • 1/4 cup coconut or brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon raw cane sugar

Instructions

  • Heat oven to 400°F and grease a muffin pan.
  • In a medium bowl, whisk the flour, spices, salt, baking powder, and baking soda.
  • In a separate, large bowl whisk all the remaining ingredients except the raw sugar.
  • Add the dry ingredients into the wet and stir until just combined.
  • Scoop into the muffin pan (I like using an ice cream scoop) and sprinkle with the raw sugar.
  • Bake for 5 minutes. Then, reduce the heat to 350°F and bake another 13-15 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the muffins cool in the pan for 10 minutes and then transfer to a wire rack to cool completely.
