Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 teaspoon vanilla extract
  • 6 medium apples
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup old-fashioned rolled oats
  • 1/3 cup packed light brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter cold and cubed

Instructions

  • Preheat oven to 350°F. Line a 9x13 inch baking pan with parchment paper, leaving an overhang for easy removal.
  • In a mixing bowl, combine 2 cups flour, salt, 3/4 cup cubed butter, the granulated sugar, brown sugar, and vanilla extract. Mix until crumbly. Press two-thirds of the mixture into the prepared pan to form a firm base.

  • Peel and thinly slice apples until you have 4 cups. Toss with cinnamon and nutmeg and spread over the crust. Top with the remaining dough.

  • Mix the oats, 1/3 cup brown sugar, 1/4 cup flour, and 1/4 cup cubed butter to make the topping. Sprinkle this over the top of the apples and dough.

  • Bake for 45 minutes or until the top is golden brown. Cool before cutting into bars.
