Ingredients

  • 6 cups mixed greens washed and dried
  • 2 apples (Fuji, Gala, or your favorite) cored and thinly sliced
  • 1/3 cup dried cranberries
  • 1/2 cup goat cheese crumbled
  • 1/3 cup olive oil
  • 4 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 2 tablespoons honey
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup toasted pecans

Instructions

  • In a large bowl, combine the mixed greens, sliced apples, dried cranberries, and crumbled goat cheese.
