Ingredients

  • 1 large bell pepper red or yellow, cut into 1.5-inch pieces
  • 1 medium zucchini sliced into ¼-inch rounds
  • 1 cup broccoli florets cut into bite-sized pieces
  • 1 cup cauliflower florets cut into bite-sized pieces
  • 1 cup cherry tomatoes halved
  • 1/2 large red onion cut into 1-inch pieces and layers separated
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt or to taste
  • 1/4 teaspoon freshly ground black pepper

Instructions

  • Preheat your air fryer to 380 degrees F for 3 minutes.
  • Prepare your vegetables. You need to aim for uniform size, this is the easiest way to get even cooking.

  • In a large mixing bowl, toss the prepared vegetables with olive oil, garlic powder, sea salt and black pepper.

  • Arrange the seasoned vegetables in the air fryer basket in a single layer. You need to avoid overcrowding. If necessary, cook in batches.
