Ingredients

  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 2 tbsp Lemon juice
  • 1 shallot finely diced
  • 1 clove garlic crushed
  • 1 tsp Dijon mustard
  • 1 tbsp honey
  • 2 tsp dried oregano
  • 2 tbsp fresh parsley finely chopped
  • ½ tsp salt
  • ¼ tsp black pepper freshly ground

Instructions

  • Add all the prepared ingredients to a bowl.
  • Use a whisk to emulsify it together.
  • Pour it into a jar or over your salad.

Notes

  • I usually allow the dressing to sit for a few minutes before using, I like letting the flavors to meld together.
  • You can make it in advance and store it in the fridge for up to a week, so you can cut down on prep on the day you want to serve it.
  • If you wadial up the intensity, infuse the olive oil with the shallots and garlic by lightly sautéing them before adding to the mix.
