How to Make Green Goddess Dressing

Ingredients

  • 2 ripe avocados pips and peels removed
  • 1 cup parsley
  • 1 cup mixed herbs e.g., mint, basil, chives, and dill
  • 2 stalks of spring onions chopped
  • 2 tbsp lemon juice
  • ¼ cups olive oil
  • 2 tsp capers
  • 1 clove garlic
  • salt and pepper

Instructions

  • Place all of the ingredients into your food processor.
  • Blend until smooth. You may add a little water if it is a bit thick.
  • Scoop out into a serving bowl and enjoy as a dressing, a dip, or a spread.

Notes

  • To make a vegan version of Green Goddess dressing, use a dairy-free yogurt or silken tofu instead of the avocado. (Yes, avocado is considered by some to be non-vegan-friendly because it relies on bees to help it cultivate naturally.) These replacements will still provide the creaminess the avocado did previously. You'll also want to play around with the seasoning as such a major substitution will undoubtedly affect the overall taste.
