Ingredients

  • 1 lb broccoli chopped into small florets
  • 1/2 cup red onion diced
  • 1/3 cup roasted sunflower seeds
  • 1/3 cup dried cherries or cranberries chopped
  • 1/2 cup plain Greek yogurt 2% or full fat
  • 2 tbsp extra virgin olive oil
  • 1 1/2 tbsp white vinegar
  • 1 tbsp honey
  • 1/2 tsp fine sea salt
  • Freshly ground black pepper to taste

Instructions

  • In a large mixing bowl, combine the broccoli florets, diced red onion, sunflower seeds, and dried cherries.
  • Whisk together the Greek yogurt, olive oil, white vinegar, honey, sea salt, and black pepper in a small bowl until the dressing is smooth.
  • Pour the dressing over the broccoli mixture and toss until all ingredients are well coated. Adjust the seasoning with additional salt, pepper, or vinegar to taste. Let the salad sit for a few minutes to allow the flavors to meld and the broccoli to soften slightly.
