Ingredients

  • 3 medium red potatoes chopped into 1/2" to 3/4" pieces
  • 1 tbsp coconut oil melted
  • 1 tsp garlic flakes
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded mozzarella cheese

Instructions

  • Preheat the oven to 400°F. Lightly coat a baking sheet with non-stick spray.
  • Pat the chopped potatoes dry with a paper towel to remove excess moisture.
