Ingredients

  • 6 ounces cooked chicken breast shredded
  • 1 tablespoon extra virgin olive oil
  • 2 cups broccoli florets chopped
  • 1 large red bell pepper diced
  • 3 green onions chopped
  • 2 cloves garlic minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 8 large eggs
  • 1/2 cup sharp cheddar cheese freshly grated

Instructions

  • Preheat your oven to 350 degrees F and prepare a 9-inch pie dish with non-stick cooking spray.
  • In a skillet, heat olive oil over medium heat and sauté broccoli and red bell pepper until they begin to soften, about 5 minutes. Add green onions, garlic, salt, and pepper, and cook for another minute.

  • Whisk eggs in a large bowl, then fold in the cheddar cheese, shredded chicken, and sautéed vegetables.
