Ingredients
2cupsrolled oats
1 ½cupsdesiccated coconut
1cupall-natural peanut butter
¼cuphoney
¼cupchia seeds
1tspground cinnamon
1tspvanilla essence
½tspsalt
½cupdark chocolate drops
Instructions
Add the oats to the food processor and blend until it forms a coarse crumb.
Add the rest of the ingredients to the food processor. Blend it all together until it's smooth.
Break off chunks of the dough and roll it into balls, squeezing as you go. Repeat until you have finished all the dough.
Notes
Use creamy peanut butter, not chunky. The creamy texture will ensure the balls stay cohesive.
Refrigerate for at least 30 minutes before eating to let the balls firm up.
Use cashew butter if you're not a fan of peanut butter. Both are creamy and will work well with the other ingredients.
