Ingredients

  • 2 cups rolled oats
  • 1 ½ cups desiccated coconut
  • 1 cup all-natural peanut butter
  • ¼ cup honey
  • ¼ cup chia seeds
  • 1 tsp ground cinnamon
  • 1 tsp vanilla essence
  • ½ tsp salt
  • ½ cup dark chocolate drops

Instructions

  • Add the oats to the food processor and blend until it forms a coarse crumb.

  • Add the rest of the ingredients to the food processor. Blend it all together until it's smooth.

  • Break off chunks of the dough and roll it into balls, squeezing as you go. Repeat until you have finished all the dough.

Notes

  • Use creamy peanut butter, not chunky. The creamy texture will ensure the balls stay cohesive.
  • Refrigerate for at least 30 minutes before eating to let the balls firm up.
  • Use cashew butter if you're not a fan of peanut butter. Both are creamy and will work well with the other ingredients.
