Avocado Deviled Eggs Recipe

Ingredients

  • 6 large eggs
  • 1/2 jalapeno or 2 tbsp, diced.
  • 1 avocado halved pitted, and peeled
  • 1 tbsp freshly squeezed lime juice
  • 1/4 cup mayonnaise
  • 2 tbsp fresh chopped cilantro divided
  • 2 tbsp everything bagel seasoning
  • Salt and black pepper to taste.

Instructions

  • Fill a small sauce pot with water enough to submerge 6 eggs and bring to a boil. Place your eggs in the water using a spoon and boil for 10-12 minutes until yolks are hard. Once ready, remove from the saucepot and carefully place in an ice bath.
  • Peel your boiled eggs and cut them in half lengthwise. Place the whites on a serving plate and remove the yolks with a spoon and place them in a large bowl.
  • In the large bowl with egg yolks, add mayonnaise, diced jalapeno, avocado, half the cilantro, lime juice, and salt and pepper. With a fork, mix until well combined. Alternatively, add all ingredients to a food processor and process until blended.
  • Begin spooning your deviled egg mixture into the eggs. Garnish with everything bagel seasoning, remaining cilantro, and serve.
