In a small bowl, combine sage, fennel seeds, thyme, red pepper flakes, nutmeg, cloves, garlic, salt and pepper.

Place the ground turkey in a large bowl and sprinkle the mixed spices over it. Mix gently with your hands until well combined.

Divide the turkey mixture into 8 equal portions and form each into a patty.

Cook the patties for about 3-5 minutes on each side, or until cooked through and slightly browned.
