Preheat the oven to 350°F and line a cookie sheet with parchment paper. Set aside.

Melt the coconut oil and chocolate in the microwave for 30 seconds at a time until smooth.

Beat together the egg, egg yolk, coconut sugar, applesauce, vanilla extract and salt, using an electric hand mixer.
