In three separate bowls, place the flour, beaten egg, and panko breadcrumbs.

Pat the halloumi sticks dry. Dredge each stick in flour, dip it in the egg, and then roll it in the panko breadcrumbs, shaking off excess.

Bake for 20-25 minutes, turning them halfway through, until the coating is golden and crispy. Sprinkle the fries with parsley if using and serve with your desired dipping sauce.
