Heat 1/2 tablespoon of oil in a large skillet over medium-high heat. Add beaten eggs and stir until softly scrambled.

Remove the eggs from the pan and set them aside. In the same skillet, add the remaining oil and sauté the onion, bell pepper, and garlic for about 2-3 minutes until just softened.

Return the eggs to the skillet and drizzle the light soy sauce over the mixture. Stir-fry everything together for another 1-2 minutes until well combined.
