Heat olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for about 3-4 minutes on each side until the pieces are browned.
In a bowl, combine apple juice, light brown sugar, ketchup, cider vinegar, water, soy sauce, bourbon, the crushed garlic, ground ginger, and red pepper flakes.
Scrape the bottom of the pan to get any browned bits. Return the browned chicken to the skillet. Bring the sauce to a hard boil, then reduce heat and allow to simmer.
