On a floured surface, combine flour and salt. Create a well and add the egg yolks along with the whole egg

Knead the dough by hand for approximately 10 minutes until it is smooth and elastic. Allow the dough to rest for 10 minutes.

After resting, roll out the dough into a rectangle (about 1/8-inch thick) and cut it into strips between 1/8-inch and 1/4-inch wide using a knife or pizza cutter.

Bring a large pot of salted water to a boil. Add the freshly cut noodles and cook for 2 to 4 minutes until tender. Drain the noodles and serve with your favorite sauce or in soup.
