– 3 cups fresh corn kernels, from about 4 ears of corn – 1 medium red bell pepper, finely diced – 1/2 medium red onion, finely diced

In a large bowl, combine all of the ingredients. Stir until well mixed.

Serve immediately, or allow the salsa to chill in the refrigerator for 1-4 hours before serving to enhance the flavors.
