Halve the avocado, remove the pit, and slice it thinly.

Butter one side of each bread slice. Place two slices, butter-side down, in a cold pan.

Layer Monterey Jack cheese, avocado slices, salt, pepper, and cheddar cheese on the bread in the pan.

Top with the remaining bread slices, butter-side up. Turn the heat to medium and cook until the bread is golden and the cheese is melted, flipping once.
