Ingredients
For the chicken
4tspFresh lime juice
2tspGreen tabasco
2tspHoney(omit for whole30)
2tspOlive oil
1 LbBoneless skinless chicken breast,about 4 small breasts
For the salsa:
2Large Mangos,diced
2Large Roma tomato,diced
1Avocado,diced
2/3CupRed bell pepper,diced
6TbspCilantro,minced
Juice of 1-2 large limes,(depending how limey you like it)
Salt, to taste
Instructions
In a small bowl, whisk together all of the ingredients, up to the chicken
Place the chicken breast into the bowl and stir around to coat in the marinade. Cover and refrigerate for at least 2 hours - to overnight (the longer the better!)
Rub a grill with olive oil and heat to medium heat.
Grill the chicken until no longer pink inside, about 10-12 minutes total, flipping once half way through. Then transfer to a plate and let rest 5 minutes.
Combine all the ingredients for the mango salsa in a large bowl and mix well. Season to taste with salt.
