Ingredients
1LbCauliflower,cut into large florets
2TbspOlive oil
2TbspRanch mix (recipe below)
2TbspFinely grated Parmesan cheese
Pinch of sea salt
1Large avocado,cubed
Ranch seasoning:
1TbspDried Parsley
1tspDried Dill
1tspGarlic powder
1tspOnion powder
3/4tspSalt
1/3tspPepper
Instructions
Pre heat your oven to 400 degrees.
In a large bowl, toss together the cauliflower and oil. Mix the ranch mix together and add 2 Tbsp of it to the cauliflower, tossing to coat.
Spread onto a large, rimmed baking sheet in a single layer. Try to leave some space between then florets.
Cook for 15 mins. Then, stir and cook another 10-12 minutes, until golden brown.
Transfer to a bowl and toss with the cheese, avocado and another pinch of salt.
